| 摘 要： | 目的 研究山药中多糖的提取工艺.方法 采用水浸法从鲜山药中提取多糖,通过单因素试验研究料液比、提取温度、提取时间对粗多糖提取量的影响.结果 优化工艺条件为料液比为1 g:9 mL,提取温度为70℃,浸提时间为3 h,此时多糖提取量可达0.905%.结论 采用水提法提取多糖量比文献所述增加了近2.7倍.
