摘    要:双孢菇兼具营养与保健功能,是我国出口创汇的重要食用菌品种。阐述了目前常用的双孢菇低温、气调、辐射等保鲜技术和盐渍、酸渍、干制以及下脚料加工技术。

Abstract:Agaricus Bisporus, which has the nutrient and healthy functions, is an important edible mushroom for export to earn foreign exchange. This paper expounds the current common fresh preserving technologies of Agaricus bisporus such as low temperature technology, gas-conditioning technology and radiation technology, and the processing technologies such as salting technology, pickling technology, dry-curing technology and leftovers processing technology.
