子囊菌SD-9701产天然红色素的稳定性研究

摘    要:实验分析了光、温度、pH、氧化还原剂、Vc、防腐剂、糖和不同金属离子对能产生红色素的菌株—子囊菌SD-9701的影响.结果表明,该色素耐光耐热性较好;碱性条件下色素稳定性较好;色素耐氧化性还原性较差;Vc,糖和苯甲酸钠对色素稳定性无不良影响;金属离子Fe3 ,Cu2 ,Sn2 和Pb2 对该色素稳定性有不良影响,Fe2 有一定的影响,而Na ,Mg2 ,K ,Ca2 ,Zn2 和Al3 对色素的稳定性皆无不良影响.

Abstract:The effects of light,temperature,pH value,oxidizing agent,reluctant,Vc,preservative,sugar and metal ions on the stability of the natural red pigments from ascomycetes SD-9701 were studied.Experimental results proved that the pigment had strong resistance against light and heat.The stability of the pigment was better under the alkaline condition.Its resistance against oxidizer and reluctant was poor.Effects of Vc,sugar and preservative on the stability of the pigment did not exert negative.But Fe3 ,Cu2 ,Sn2 and Pb2 ions had bad effects on the stability.And Fe2 ion had weak effects.Other metal ions,such as Na ,Mg2 ,K ,Ca2 ,Zn2 and Al3 ions had no negative effects on the stability of pigment.
