计算机计算混合食物最佳配比及必需氨基酸构成比效价

摘    要:用计算机计算混合食物的最佳比例以及其互补效果,结果显示,按算出的最佳比例混合食物后,氨基酸分有大幅度提高,而搭配不当则降低混合食物的氨基酸分。建议用食物必需氨基酸的“构成比效价”(CRV)定量评价食物的互补作用。CRV的意义是表示食物必需氨基酸构成比例接近国际粮农/卫生组织(FAO/WHO)模型的程度,混合食物CRV增加越大,获得的互补作用就越大。将食物的CRV与氨基酸分同时考虑,可得到混合食物的最佳比例。

Abstract:This paper reports a method of computer calculation of the optimal ratio of foods in a mixed diet and the nutritional evaluation of its complementary effects. The results showed that the amino acid scores of the mixed diets mixed according to the optimal ratio calculated by computer might be elevated to much higher levels. However, one may get a negative affect if improper foods are taken in the combination, and the amino acid score may decrease to certain extent. We also suggest that to evaluate the complementary effect of foods in a mixed diet the "Composed Ratio Value" (CRV) of their essential amino acids should be considered quantitatively. CRV indicates the degree of resemblance of the composite ratio of essential amino acids in the mixed diet to that of the FAO/WHO model, i. e. the higher is the CRV of a mixed diet, the greater will be the complementary effect. Therefore the optimal ratio of foods in a mixed diet can be obtained by considering both its essential amino acid CRV and the amino acid score.
