摘    要:经诱变、筛选而得的Y-3#啤酒菌株,其小试、中试结果良好。为验证此菌株是否适应大生产,笔者进行了大生产试验,结果表明Y-3#啤酒菌株对扩大生产适应性强,具有发酵温度高、降糖快、还原双乙酰能力强,酵母凝集性好,发酵周期短,生产的啤酒品质优越等特点,有着良好的推广前景。

Abstract:Saccharomyces cerevisiae strain Y-3 was obtained in laboratory by mutagenizing and screening selection for beer production.In order to find out the strain characteristics,we made a mass production experiment after the laboratory works,and proved that the S.C.Y-3 had high adaptability for wheat liquor and mass fermentation.It showed a lot of advantages,higher fermentation temperature,faster fermentation speed,higher ability of diacetyl reduction,better yeast flocculation,shorter fermentation pariod and better quality beer produced.So it gave good prospects for the strain applied to industrial beer production.
