壳聚糖的提取及其脱乙酰化研究

摘    要:从对虾壳中提取甲壳素,并探讨其脱乙酰化过程中碱处理方式及温度对脱乙酰度和分子量的影响.结果表明:加入乙醇、升高温度能够提高甲壳素的脱乙酰度;乙醇存在下的脱乙酰反应是一级反应;采用间歇碱处理的方式能够在提高脱乙酰度的同时,保持较高的分子量.

Abstract:The chitin was extracted from the exoskeleton of the prawn. The influences of alkali treatment and temperature on the deacelation process of chitin were discussed. The results show that the addition of ethanol and raising temperature can increase the deacelation degree of chitin; the deacelation reaction with the lying of the ethanol is a first order reaction; the intermission alkali treatment can obtain chitosan of high deacelation degree with high molecule weight.
