栀子色素原料干燥及提取速率的探讨

摘    要:栀子色素是我国主要的天然食用色素品种之一。本文探讨了栀子果实状态和处理条件对干燥速度的影响。以及提取条件对提取速率的影响。结果表明 ,切瓣干燥有利于栀子果实快速干燥 ,干燥原料提取速率略高于新鲜原料 ,30 % - 50 %乙醇溶液作为提取剂 ,有利于提高提取速率 ,提取剂倍率不会明显影响提取速率。

TREATMENT OF RAW MATERIAL AND EXTRACTION IN GARDENIA JASMINOIDES COLORANT

Abstract:The Gardenia jasminoides colorant is a major natural food colorant in China. The influence of the state of the Gardenia jasminoides fruit and the treatment condition in dry rate, and the extractive condition in extractive rate were investigated. It was shown, cut sections of the Gardenia jasminoides fruit should increase the dry rate, the extractive rate of dry raw material was higher than the fresh one. It was help to increase the extractive rate with 30-50% alcohol solution as solvent. The multiple of solvent was not distinctly influent the extractive rate.
