郑州枸杞色素的稳定性及其吸收曲线动力学特性研究

摘    要:为了研究枸杞色素的稳定性及其吸收曲线的动力学特性,以郑州产的枸杞为原料,用无水乙醇提取,紫外可见光谱扫描,研究了3种不同成熟期枸杞色素的稳定性及其吸收曲线的动力学特性.结果表明:色素的稳定性较好,在酸、碱性溶液中吸收曲线几乎未发生变化;具有良好的耐氧化还原性和热稳定性;NaCl对色素几乎无影响;动力学研究表明在4℃条件下放置50 d,吸收曲线几乎无变化.

Abstract:This paper is to study stability and dynamic property of absorption spectrums of medlar fruits pigment of Zhengzhou.The pigment are extracted by the absolute alcohol,scanned by the UV-visible scanner,by this way we studied the medlar fruits pigment coming from different growth periods.The results indicates that the pigment has good stability.The absorption spectrums of the pigment are stable in acid and alkaline solution.It also has good stability in oxidant and reductant.Besides,good thermal stability.NaCl nearly has no influence on medlar fruits pigment.The absorption spectrums of the pigment are stable at 4 ℃ after 50 days.
