高微量元素豆芽研究

摘    要:以豆芽作为载体,通过其发芽过程使无机铁、锌转换为有机铁、锌.在发芽以前通过控制添加剂量可以形成高铁和高锌豆芽.此种豆芽可以作为铁源和锌源,更易被人们所接受,并且为治疗和预防锌、铁微量元素缺乏症开辟了一条更可行的途径.

Abstract:This essay uses bean sprouts as substrate,and transforms inorganic iron and zinc to organic state through the sprouting process of soybean and mungbean.The bean sprouts may contain different contents of iron and zinc by controlling the additions of zinc and iron solutions before germination.This kind of bean sprouts can be used as a food source with abundant iron and zinc,and be absorked easier.Furthermore,this kind of bean sprouts provides a potential approach for the prevention and treatment of the shortage of zinc and iron.
