测定西红柿中的维生素C及其对人体健康的作用

本文采用2．4-二硝基苯肼分光光度法测定了3种西红柿中维生素C的含量，并且进行了比较。实验结果表明，新疆鲜西红柿（大）中维生素C的含量1．7mg／100g，新疆干西红柿（大）中的维生素C的含量0．44mg／100g，内地的鲜西红柿（小）中的维生素C的含量1．6mg／100g.

Study on the To Determination of the Vitamin C Contained in Tomato

In this paper the total contents of vitamin C contained in 3 different types of tomatoes is measured using spectrophotometry of 2.4-dinitrophenylhydrazine. The results show that, the content of vitamin C in Xinjiang fresh tomatoes, Xinjiang dried tomatoes and small fresh tomatoes （from other part of China） were 1.7mg/100g, 0.44mg/100g, 1.6mg/100g respectively.
