天然果蔬保鲜剂的研究进展

摘    要:介绍了近年来国内外天然果蔬保鲜剂的研究与应用概况,总结了芸香科的九里香属,樟科的樟属,菊科的蒿属植物及其它科属植物在果蔬防腐保鲜上的利用情况。高良姜、魔芋、百部、麦门冬等中草药的煎剂或浸泡提取物,可用于柑桔、苹果、草莓、食用菌等果蔬的保鲜;大蒜可用于柑桔类果实的保鲜;植酸及以植酸为原料配制的保鲜剂,可延长草莓、香蕉、哈蜜瓜、食用菌等易腐果蔬的贮藏期并保鲜;雪鲜、森柏、节肢动物外壳提取物、岩盐提取物等对果蔬也有效好的防腐保鲜效果。

Abstract:In this paper,the author discussed in detail the basic facts of studies and applica- tions of fresh-keeping agehts for fruit and vegetable at home and abroad in recent years and sumed up the situation of applying some perfume plants such as Rutaceae Murraya,Lauraceae Cinnamomum, Compasitae Artemisia and so on to fruit and vegetable fresh- keeping. The extractons from Alpinia Officinarum ,Amarphalus konjac K and other chi- nese herbal medicines appeared good results in preserving orange,apple ,strawberry and edible fungi.Garlic,which was appled in citrus fruits,and phytic acid or fresh-keeping a- gent from it,which was appled in easy rotten fruits such as strawbrry,banana,Hamimel- on and edible fungi, could effectively prolong their storage period and keep them fresh.Moreover,the extructions from snow-fresh,semper-fresh and arthropod shells and rock salt were effective in preservation and fresh-keeping.
