紫色甘薯生长过程中花色素含量变化研究

摘    要:研究了紫色甘薯不同生长期花色素、游离氨基酸、蛋白质的含量变化及苯丙氨酸解氨酶的活力变化,结果表明:花色素的积累与蛋白质含量变化呈反比,与苯丙氨酸解氨酶活力呈正比,与游离苯丙氨酸的含量呈反比.根据花色素等的变化确定10月下旬是紫色甘薯的最佳收获期,为紫甘薯产业化开发提供优质原料.

Abstract:Purple sweet-potato which is in bright gay color and its activity is strong and it is rich in anthocyanin. It is natural pigment and health food resources. The contents variation of anthocyanin, free-amino acid(AA), protein, phenylalanine ammonia-lyase (PAL) in purple sweet-potato in its different growing time were studied. Results showed that the content of anthocyanin was positively proportional to that of PAL activity, but it was negatively proportional to that content of phenylalanine and proteins. Besides, the optical harvest time for purple sweet-potato is in the end of October according to changing with anthocyanin and so on. It is high quality raw material in its industrial exploitation.
