摘    要:
本文研究了蔷薇色素的提取工艺,理化性质及该色素对光、热、酸、碱形的稳定性,并初步作了成份分析。为蔷薇果的开发利用提供了科学根据。

Abstract:
In this paper ,we have made a study on the extractive method and determined pigmnt properties of Fruit of Japanese Rose . We have studied the stability of pigments in heat, light acid and base and provided scienlific basis for the extraction and application of pig-ments of Fruit of Japanese Rose.
